Mommy to Zane and Ryder. Two of the most wonderful kids in the world. Wife to Kib, my amazing husband. My favorite thing to do is spend time with my family and watch my kids grow.
We had such an interesting Halloween between Zane being in the hospital with Pneumonia, and Ryder working on a bad case of flu/walking pneumonia/bronchitis. We decided to send Zane as a patient, seemed fitting given our week. The people we saw on the streets thought it was a pretty cool costume (little did they know). Ryder went as a monkey. We didn't make it more than about 10 minutes, and Zane was begging to go home. We were happy to oblige. We came home with about 6 pieces of candy, every parents dream. Sadly we missed out on a lot of fun festivities, but there is always next year. We are just grateful that the boys both seem to be on the upswing from all of this.
So I know you asked for this a long time ago but I finally remembered when I had access to a computer so here you go:
Sour Cream and Chicken Enchilada's:
2 chicken breasts 1 can cream of chicken soup 1 can diced green chilis 1 pint sour cream 2 cups grated montery jack cheese 2 cups grapted medium cheddar cheese 1 package flour tortillas
Cook chicken (I usually just broil it with some spices) and shred. Mix chicken, soup, chilis, and sour cream. Fill tortilla with mixture and sprinkle a good portion of cheese on top then roll and stick in 9x13 pan (helps to spray the pan first). Repeat till the pan is full. You'll want to make sure you have some mixture and cheese leftover to spread on top when all tortillas are rolled and in place. Bake @ 350 for 1 hour. Enjoy!
